WILD FOOD FESTIVAL 2024 – the culinary highlight of JAGD & HUND in Dortmund

Prominent Michelin-starred chefs, TV and celebrity cooks to inspire lovers of game cuisine with live cooking demonstrations and exclusive workshops 

The WILD FOOD FESTIVAL, held as part of Europe's largest hunting show JAGD & HUND, will be serving up everything gourmet hunting hearts desire. A captivating stage programme and cooking demonstrations featuring celebrity chefs such as Johann Lafer and Brian Bojsen will inspire visitors to try things out, and also provide valuable practical tips on cooking at home. In themed workshops, the best chefs in the business will show participants how to prepare versatile game dishes to perfection. The WILD FOOD FESTIVAL can be visited as part of JAGD & HUND. Dortmund, 16 November 2023 – Expo, food and demonstrations for the ultimate game pleasure – visitors to the WILD FOOD FESTIVAL at Messe Dortmund can once again look forward to amazing tastings, a wide range of delicious, fresh game products and ingredients plus aperitif suggestions, creative recipe ideas and a selection of practical cooking accessories. Numerous on-stage activities and separately bookable workshops with game experts, celebrity chefs, TV cooks and Michelin-starred chefs have now been scheduled.

 

Culinary programme highlights on stage


Every day from 11:00 to 12:00 hrs and from 15:00 to 16:00 hrs, hunting couple Magdalene and Wolfgang Grabitz will present country game cuisine ranging from the down-to-earth to the truly exotic. The duo has been delighting JAGD & HUND visitors for years with their cookery demonstrations and seminars. Meat and game sommelier Michael Keller will also be in attendance between 12:00 and 12:30 hrs on all days of the show, demonstrating how to cut game correctly under the slogan “Keller's Quick Cuts”, and the master bakers Wildbakers, who once “set out to bake the perfect bread”, will also be on stage every day with the aim – among other things – of freeing the bakery trade if its somewhat crusty image (no pun intended).

 

This year's WILD FOOD FESTIVAL will be visited once again by celebrities – both on stage and in workshops – including the popular Austrian Michelin-starred chef and TV cook Johann Lafer. In Germany, he is well known through TV cook shows such as 'Himmel un Erd' and 'Lafer! Lichter! Lecker!'. The professional chef specialises in natural, regional cuisine with off-the-wall touches, and is an expert in working with game. In other lunchtime cooking demos, celebrity chef Brian Bojsen, restaurateur, cook, photographer and surfer, a creative jack-of-all-trades in the kitchen and on screen, and TV chef Florian Conzen will delight onlookers with their amazing venison dishes.

 

In the afternoons, starting at 16:30 hrs, the 'Wild Chefs' – well versed in the 'game' game – will also be on hand for general consultation. These will include Ina Maria Klups ('Game schnitzel with an Asian touch'), Michael Keller ('Quick and easy venison sausage'), Jan Urban ('Pink venison sweetbreads on Jerusalem artichokes served with Brussels sprouts and plum jus') and Markus Hofman ('A different take on venison sausage'). They will all be offering cookery workshops for limited numbers at the WILD FOOD FESTIVAL.

 

Personal workshops with experts and celebrity chefs


Here, amateur cooks and hunters will find lots of tips and interesting facts on the topics of fine-cutting game, cooking methods and seasoning. Fans of sophisticated game cuisine can also try their hand at cooking under expert guidance.

 

The Tuesday of the show will see the launch of Game Street Food Dishes featuring Ina-Maria Klups. The game cook will show how game can be turned into delicious, healthy snacks or special finger food for your next party. In the afternoon, avid hunter and chef of the 'Brasserie Stadthaus' in Düsseldorf, Florian Conzen, will introduce those attending his workshop on 'Ragout of nutria with home-made gnocchi' to the world of game cuisine. The next day will be all about Enjoying BBQ Game with well-known meat and game sommelier Michael Keller. The hunting enthusiast will share his knowledge of meat selection ('how to find the right cut') and fine seasoning of skewers, haunch steaks, sausages and burger patties. The workshop 'Experiencing game – there are more steaks than you think!' on the Thursday of the show will see master butcher explain how to cook steaks from leg of venison, mouflon or wild boar as well as explaining the benefits of 'sous vide' vacuum cooking. The air will also be filled with the smell of roasting and spices. There will also be great cookery sessions on offer at the weekend. Jan Urban, head chef at the popular traditional Dortmund restaurant 'Overkamp', will be presenting his interpretation of a game schnitzel on the Saturday of the show with a saddle of venison in nut breadcrumbs served with Brussels sprouts and red cabbage, cranberries and miso butter. The sausage theme will continue on the Sunday of the show with hunter, game sausage expert and 'Rehzept.de' blogger Markus Hofmann demonstrating how to make the perfect venison sausage with that extra touch. Danish chef Brian Bojsen will be organising the afternoon workshop programme on the weekend of the show. Known to many as a former judge on ZDF cook-off programme 'Küchenschlacht', his Scandinavian-influenced cuisine uses everything nature has to offer.

 

WILD FOOD FESTIVAL workshops – the perfect Christmas gift


Workshops featuring well-known TV and Michelin-starred chefs are among the special culinary highlights at the WILD FOOD FESTIVAL. Tickets can be booked exclusively at jagdundhund.de/en-gb/tickets. But be aware: it pays to be quick, because participant numbers are limited to a maximum of 20 per workshop for a person-to-person cooking experience.
